Vegan Corn Chowder

This creamy chowder recipe is an all-time favorite of a lot of people. The creaminess comes from the use of coconut milk and potato without the need to add any dairy.

As a recommendation, if you want to add a bit more flavor, garnish with greek yogurt, sour cream, or goat cheese, a wedge of lime or lemon, cilantro, and scallions.

2 Garlic Cloves
1 Jalapeno or Poblano Pepper
1 Yukon Gold Potato
1 can Sweet Corn
1 can Coconut Milk
2 1/2 cups Vegetarian Broth
1 tsp salt
1 tsp Ground Black Pepper
