Pinto Beans Stew Recipe

This pinto beans stew recipe is the perfect cold-weather comfort meal. It warms you to the bone and can be cooked in a lot of ways. You can cook it stove-top, in your Instant Pot, or all day in the slow cooker.

Pinto Beans Stew Ingredients:
1 tbsp Olive Oil
1 Medium-Sized Onion (Chopped)
2-3 Garlic Cloves (Peeled & Crushed)
1 Carrot (Chopped)
1 Tomato (Chopped)
½ tsp Cumin Powder
1 tsp Smoked Paprika (Use Less or More as per Preference)
1 tsp Salt
1 can of Pinto Beans (15 Oz, Drained & Rinsed)
3 cups of Chicken Broth (Add More if Needed)
1-2 bunches of Fresh Parsley (Chopped)
3-4 cups of Fresh Spinach Leaves
1 tbsp Lemon Juice (Freshly Squeezed)

For the Smoked Chicken:
2 Chicken Breasts (Boneless & Skinless)
1 tbsp Olive Oil
Spice MIX (½ tsp each of Cumin Powder, Smoked Paprika, Garlic Powder, Onion Powder, Brown Sugar, Salt)
