50g Light Brown Sugar
8 Canned Pineapple Rings (Reserve the Juice)
7 Maraschino Cherries
2-3 Tbsp Coconut Flakes, Toasted

FOR THE SPONGE
150g Softened Unsalted Butter
150g Golden Caster Sugar
150g Self-Rising Flour
50g Desiccated Coconut
4 Limes, Zested, 1 Juiced
2 Large Eggs
