Couscous Salad with Chickpeas

This couscous salad recipe is a combination of roasted and fresh ingredients, which gives it a fun crunch!

To those who are on a strict calorie restriction, you can skip the feta cheese and sugar. The sugar is used to caramelize & balance the sour taste of the cherry tomatoes. Yet, it can be left out.

Couscous Salad Ingredients:

1 cup canned chickpeas (rinsed, drained, & pat dried with a paper towel)
2 cups cherry tomatoes (divided)
½ cup Pearl Couscous
1 garlic clove (minced)
1-2 tsp sugar
½ tsp smoked paprika
½ tsp cumin powder
1-2 tsp lemon juice
1 medium-sized cucumber (chopped with bite-size pieces)
Fresh sweet basil leaves
Extra virgin olive oil (use as needed)
Salt & Pepper (as per taste)
2-3 Tbsp feta cheese (crumbled)
¼ cup fresh parsley leaves (chopped)

Prep Time: 10 minutes
Cook Time: 35-50 minutes
Servings: 2
