Beetroot Spinach Salad Recipe

The tender roasted wine-colored beetroots make an appetizing bite! While the spinach infuses its mellow earthy tones, the mint & coriander garnish adds a refreshing taste. The creamy yogurt dressing makes this simple salad extra yummy with its flavorful kick.

Spinach and Beetroot Salad Ingredients:

350g Beetroot (Roasted)
2 cups Fresh Baby Spinach Leaves (Chopped)
1½ cup Canned Spinach
¼ cup Fresh Peppermint Leaves (Chopped Roughly)
¼ cup Fresh Coriander Leaves (Chopped Roughly)

½ cup Non-fat Plain Yogurt
1 tsp Cumin Powder
1 tsp Crushed Garlic
4 tbsp Malt Vinegar
½ tsp Crushed Black Pepper
½ tsp Salt
